Pumpkin Smash with Crispy Mushroom Cracker

Ingredients

For Pumpkin Balls
Steamed pumpkin: 120 g
Miso: 10 g
Mirin: 20 g

For Crispy Lion's Mane Mushroom Crackers
Dried lion's mane mushrooms: 25 g
Tofu: 38 g
Water: 470 g
Soy sauce (Liquid Aminos): 14 g
White pepper powder: ¼ tsp
Paprika: 1 tsp
Psyllium husk powder: 0.5 tbsp
Coconut flour: 9 g
Sunflower seed flour: 30 g
Rice bran oil: 12.5 g
Instructions
Step 1: Mushroom Preparation
Soak the dried lion's mane mushrooms into water until soft. Tear it into small pieces.
Bring a pot of water to a boil, blanch the soaked mushrooms, then drain well.
Transfer the mushrooms to filtered water to soak for a few minutes, then squeeze out all excess liquid thoroughly.
Step 2: Making the Mushroom Crackers
Place the prepared mushrooms into a food processor with a small amount of water.
Add the tofu, nutritional soy sauce, white pepper, and paprika, then pulse until finely shredded.
Add the psyllium husk powder, coconut flour, sunflower seed flour, and rice bran oil. Mix thoroughly at low speed.
Flatten small portions of the mushroom mixture and steam for about 2 minutes to set the shape.
Allow to cool, then cut into desired shapes using cookie cutters or molds.
Preheat the oven to 140°C. Bake for about 15 minutes or until golden and crispy.

Step 3: Pumpkin Balls & Assembly
Mash the steamed pumpkin with a fork until smooth.
Mix in the miso and mirin until well combined.
Use an ice cream scoop to shape the pumpkin mash into neat balls.
Plate the pumpkin balls alongside the crispy lion's mane mushroom crackers and serve.
