Instructions
Step 1: Make the flatbread dough
Mix the all-purpose flour, salt, and baking powder well in a mixing bowl.
Add the hot water to the dry ingredients and stir with chopsticks or a fork until lumps form.
Let it cool for 1 minute until the scalded dough is safe to touch.
Knead briefly, then add the rice bran oil.
Knead again until a rough dough forms. Cover with a damp cloth and let the dough rest for 30 minutes.
Step 2: Shape and cook the flatbread
Divide the rested dough into 8 equal pieces and roll each piece into a ball.
Let the dough balls rest again for 20 to 30 minutes.
Roll out each dough ball to 1 mm thickness.
Pan-fry both sides of each flatbread on a skillet for 45 seconds per side until lightly browned and cooked through.
Step 3: Prepare the kelp hummus
Place the cooked chickpeas, classic curry powder, salt, lemon juice, and oil into a food processor and blend.
Slowly add the filtered water while blending until you get a smooth paste
Soak the dry kelp bud until soft, then drain the water thoroughly.
Roughly chop the kelp bud and mix it evenly into the hummus.
Step 4: Assembly
Take a freshly cooked flatbread and spread about 30 g of your homemade kelp hummus over it.
Layer on your favorite fillings, including wilted red cabbage, lion’s mane mushrooms, fresh tomatoes, and pickled vegetables.
Roll the flatbread tightly and serve immediately.
